🥕 Ingredients
- 200 g hulled millet
- 500 g red lentils
- 2 shallots
- 2 carrots
- 2 cm fresh ginger
- 1 L vegetable broth
- 2 teaspoons curry powder
- 2 teaspoons turmeric
- 1 teaspoon ground ginger
- A little cilantro or chives
- Salt, pepper
- Coconut oil (or other vegetable oil)
👨🍳 Preparation steps
- Finely chop the onion, carrot, and ginger.
- In a saucepan, heat coconut oil and brown the shallots and carrots for a few minutes. Add the fresh ginger.
- Add the lentils, curry powder, turmeric, and ground ginger. Pour in the vegetable broth.
- Let simmer over low heat for about twenty minutes until all the broth is absorbed and the lentils are very tender (they will have burst), stirring regularly.
- In parallel, cook the millet in boiling water for about 15 minutes.
- Season with salt and pepper and serve with a little chopped cilantro or chives.
