200 g hulled millet Vieille Graine

1 zucchini

1 egg

50 g grated Parmesan

125 g mozzarella

A few basil leaves

2 tablespoons breadcrumbs, plus a little more for coating

👨🍳 Preparation Steps
- Cook the millet in a saucepan of boiling salted water for about 15 minutes, or according to package directions.
- Drain the millet thoroughly, then let it cool.
- Preheat the oven to 200 °C (400 °F).
- Wash and grate the zucchini. Squeeze it between your hands or in a clean cloth to remove as much water as possible.
- In a bowl, mix the cooled millet with the grated zucchini, egg, Parmesan, breadcrumbs, and chopped basil.
- Season lightly with salt and pepper and mix until you get a mixture that is easy to shape.
- Cut the mozzarella into small cubes.
- Take a portion of the millet mixture, flatten it in your hand, and place a piece of mozzarella in the center.
- Close carefully and shape into a croquette. Repeat until all ingredients are used.
- Lightly roll the croquettes in breadcrumbs, then place them on a baking sheet lined with parchment paper.
- Brush with a little olive oil and bake for 20 to 25 minutes, flipping them halfway through cooking, until golden brown.
- Serve the croquettes hot to enjoy their melty mozzarella core.
