🥕 Ingredients

  • 200 g hulled millet Vieille Graine
  • 1 zucchini
  • 1 egg
  • 50 g grated Parmesan
  • 125 g mozzarella
  • A few basil leaves
  • 2 tablespoons breadcrumbs, plus a little more for coating
  • 1 tablespoon olive oil
  • Salt and pepper

👨🍳 Preparation Steps

  1. Cook the millet in a saucepan of boiling salted water for about 15 minutes, or according to package directions.
  2. Drain the millet thoroughly, then let it cool.
  3. Preheat the oven to 200 °C (400 °F).
  4. Wash and grate the zucchini. Squeeze it between your hands or in a clean cloth to remove as much water as possible.
  5. In a bowl, mix the cooled millet with the grated zucchini, egg, Parmesan, breadcrumbs, and chopped basil.
  6. Season lightly with salt and pepper and mix until you get a mixture that is easy to shape.
  7. Cut the mozzarella into small cubes.
  8. Take a portion of the millet mixture, flatten it in your hand, and place a piece of mozzarella in the center.
  9. Close carefully and shape into a croquette. Repeat until all ingredients are used.
  10. Lightly roll the croquettes in breadcrumbs, then place them on a baking sheet lined with parchment paper.
  11. Brush with a little olive oil and bake for 20 to 25 minutes, flipping them halfway through cooking, until golden brown.
  12. Serve the croquettes hot to enjoy their melty mozzarella core.
