- 500g spinach
- 1 broccoli
- 200g button mushrooms
- 4 eggs
- 1 onion
- 1 clove garlic

👨🍳 Preparation steps
- Start by cutting the broccoli into small pieces and blanch it in boiling water for 7 to 10 minutes.
- In parallel, cook the 200g of sorghum.
- Mince the onion and garlic, and slice the mushrooms.
- In a pan, sauté the onions in hot olive oil. Then add the fragrant garlic and mushrooms.
- After about ten minutes, incorporate the spinach. Let them cook gently until tender.
- It's time to add the broccoli florets and sorghum. Crack the eggs over them, season with salt and pepper, and sprinkle with fresh parsley. Cover the pan and cook for a few more minutes until the egg whites are set.
