🥕 Ingredients
- 3/4 cup hulled sorghum
- 100 g arugula
- 2 carrots
- 1 shallot
- 1 clove garlic
- Cilantro
- 2 teaspoons curry powder
- 1 egg
- 150 g Greek yogurt
- A little salt
- Pepper
- Olive oil
- Honey or maple syrup
👨🍳 Preparation steps
- Cook the sorghum for 30 minutes.
- Mince the garlic and shallot, grate the carrots, and roughly chop the arugula.
- In a pan heated with olive oil, sauté the shallot for 2 minutes, then add the carrots and arugula. Cook for a few minutes until the arugula wilts slightly. Add the garlic, curry powder, and salt, and cook for another one or two minutes.
- Once the sorghum is cooked, roughly mash it with a fork so the grains stick together.
- In a bowl, mix the sorghum with the carrot and arugula mixture, then add an egg, 100 g of yogurt, and two tablespoons of chopped cilantro. Mix well.
- Form eight patties, place them on a baking sheet, and bake for 15 minutes on each side at 180°C (350°F).
- Serve with a little Greek yogurt sweetened with honey or maple syrup.
