🥕 Ingredients
- 300 g hulled sorghum
- 200 g bacon bits or vegetarian bacon bits
- 1 onion
- 1.5 liters vegetable broth
- 1 small butternut squash
- Thyme
- Salt
- Pepper
- 250 ml white wine
- Olive oil
- 100 g Parmesan cheese
👨🍳 Preparation Steps
- First, mince the onion and sauté it with olive oil in a saucepan.
- Then, add the sorghum, cook for a few minutes, and add a teaspoon of thyme and the wine. Simmer until fully absorbed. Then, gradually add the broth until the sorghum is tender.
- In parallel, cut the squash into cubes and boil them until they are very tender. Mash them into a puree.
- Also, cook the bacon bits in a pan.
- Finally, add the squash puree to the sorghum once it is well cooked, and mix. Add the Parmesan, salt, and pepper.
- Serve with the bacon bits.
