What do sorghum pasta taste like?
Sorghum pasta generally has a mild, slightly cereal taste.
They are often less pronounced than buckwheat or legume pasta. Their flavor is nevertheless different from that of wheat pasta.
The precise taste depends on:
- the variety of sorghum;
- the level of decortication;
- the proportion of sorghum in the recipe;
- other ingredients used;
- the manufacturing process;
- the cooking time.
Pasta made only with sorghum will not necessarily have the same texture as a product combining several flours.
Do they taste the same as classic pasta?
No, not exactly.
Wheat pasta has the taste and texture that many consumers are used to. Sorghum pasta offers a different experience, but mild enough to go with the same types of sauces.
For a first tasting, choose a simple and familiar sauce:
- tomato sauce;

- olive oil and parmesan;

- mushroom cream;

It is better to discover the product for what it is, rather than expecting a perfectly identical copy of wheat pasta.
What is their texture?

Gluten-free pasta does not rely on the same protein network as wheat pasta. They can therefore become more fragile when overcooked.

How to cook sorghum pasta?

Should you add oil to the water?
This is generally not necessary.
The oil mainly stays on the surface of the water and does not replace stirring the pasta at the beginning of cooking.
To limit the risk of them sticking:
- use enough water;
- wait for a real boil;
- stir gently after pouring them;
- do not unnecessarily prolong cooking;
- mix them quickly with the sauce after draining.
Should you rinse the pasta after cooking?
For a hot dish, it is generally better not to rinse them. The remaining starch can help the sauce adhere.
For a cold salad, a quick rinse with cold water can be useful to stop cooking. Then drain the pasta carefully before adding the seasoning.

Why does my sorghum pasta break?
Several reasons are possible.
They are overcooked
This is the most frequent cause. Start checking their texture one or two minutes before the announced time.
You mix them too vigorously
Stir them gently, especially during the last minutes of cooking.
The pot contains too little water
The pasta can stick together and break when you try to separate them.
They wait too long after draining
Prepare the sauce before the end of cooking so you can immediately mix the pasta.
What sauces to choose?
Sorghum's mild taste allows for many combinations.

A tomato sauce with herbs is a simple and accessible first approach.
Pesto
Basil, garlic, pine nuts, and olive oil provide an interesting aromatic contrast.
Roasted vegetables
Zucchini, eggplant, tomatoes, bell peppers, or squash can be mixed directly with the pasta.
